I didn't add any seasoning to this dish, yet the rice is incredibly sweet and fragrant. Everyone should try making it for the kids to enjoy 😋
Cooking Instructions

Soak the quinoa for at least 4 hours until it softens. Rinse and steam until cooked.

Marinate the chicken thigh with turmeric powder for about 15 minutes until evenly coated. Then place the chicken and smashed lemongrass in a pot. Add enough water to cover the chicken. Boil until the chicken is tender.

Rinse the rice thoroughly. Then add the chicken broth to cook the rice. Once the rice is cooked, mix in the steamed quinoa.

When serving, arrange the rice and chicken on a plate. Sprinkle with a bit of scallion oil or fried shallots for extra flavor. Good luck and enjoy 👍
