Ingredients

45 mins
4 servings
  1. 3/4 cupuncooked quinoa
  2. 1 1/2 cupwater
  3. 2 tspolive oil
  4. 1/2 cuponion, diced
  5. 3eggs
  6. 10 ozorganic chicken
  7. 2 clovegarlic, minced
  8. 5 tbspsoy sauce
  9. 1 tbspteriyaki sauce
  10. 1 cupfrozen peas and carrots
  11. 1salt and pepper, to taste
  12. 2 tbspolive oil

Cooking Instructions

45 mins
  1. 1

In a medium skillet, add quinoa, olive oil and water. bring to a boil and reduce heat. Cover and let simmer for about 15 minutes. Remove from heat and stir. I let it sit for a few minutes before placing in the fridge to cool.

  2. 2

Add olive oil to a seperate pan. Heat and add onions. Immediately add eggs and stir.

  3. 3

Add garlic and chicken. ***I cheated and used a can of organic chicken, due to lack of planning ahead, and it still came out absolutely delicious. I do recommend using fresh chicken, but sometimes it's nice to have an easy substitute!

  4. 4

Once onions (and meat, if applicable) are cooked, add soy sauce, teriyaki sauce, and peas and carrots. Stir and let simmer for about 2 more minutes.

  5. 5

When cooking fried rice with actual rice, it's best to use rice that has been refrigerated overnight. The great thing about quinoa is that I only left it in the fridge for about 30 minutes, and that was all it needed!

  6. 6

So now... add that quinoa to the rest of the ingredients. I pressed down on the mixture with a spatula to add a little last-minute crispiness.

  7. 7

Add salt and pepper, to taste. I barely used any salt, the soy sauce is salty enough.

  8. 8

Remove from heat, and try not to eat everything at once, because it is addicting!!
