Jalani Pani Puri, Dahi Puri

First, fry the puris. Heat oil in a deep pan, then fry the puris for 8-12 seconds until they puff up. Remove them once they are golden and crisp. (Heat the oil, then lower the heat before frying.)

Prepare all the puris in the same way.

To make the mint water, add 2 cups cold water (500 ml) to a deep bowl. Add the mint water mix and stir well to make spicy, tangy water. If using room temperature water, add ice cubes to chill. Everything is included in the mix, so no need to add anything else. You can also add a little boondi.

To make the sweet and tangy tamarind water, add 2 cups water (500 ml) to a deep bowl. Mix in the provided tamarind water mix thoroughly. Add ice cubes and some boondi on top.

For the tamarind-date chutney, add about 3 tablespoons water (50 ml) to a bowl. Mix in the provided chutney mix well and let it rest for 10 minutes.

For dahi puri, make a hole in the fried puris. Fill with whipped yogurt, cumin powder, salt to taste, green chutney, potato masala, finely chopped onion, and cilantro. Serve immediately.

To make the potato masala, mash the boiled potatoes and mix in red chili powder, coriander powder, salt to taste, and cumin powder until well combined.
