Prepare the roasted potatoes ahead of time, even the day before. Peel the potatoes, cut them into wedges, and roast them in the oven with salt, olive oil, and rosemary. For the frittata, use the potatoes cold.

In a bowl, add the eggs, milk, nutmeg, grated cheese, and a pinch of salt. Mix well, then add the roasted potatoes cut into smaller pieces. Mix again. Your frittata mixture is ready to cook!

Heat some olive oil in a skillet. When hot, pour in the egg mixture and cook for a few minutes over high heat. Lower the heat, cover with a lid, and cook until the frittata is set. Flip it and cook the other side.

When cooked, turn off the heat and transfer the frittata to a plate. Sprinkle the shredded mozzarella on top, cover with a lid, and let it rest for a few minutes.
