Ingredients

  • 1 cupbasmati rice (about 200 grams)
  • 1/2 cupsugar (about 100 grams)
  • 1/2 teaspooncardamom powder
  • A fewsaffron strands, as needed
  • as neededChopped mixed nuts (almonds, cashews, pistachios),
  • Candied fruit (tutti frutti), as needed for garnish

Steps

  1. 1

    Rinse the basmati rice and soak it for 30 minutes.

  2. 2

    In a pot, bring double the amount of water to a boil. Add the soaked rice and cook until done.

  3. 3

    Once the rice is fully cooked, turn off the heat.

  4. 4

    In a large pan, combine the sugar and 1/2 cup water (about 100 ml) to make a syrup. Add the cardamom powder, then mix in the cooked rice. Stir for 1 minute, then add the saffron strands and chopped nuts. Cover and let it sit.

  5. 5

    Garnish with candied fruit and serve hot.
