Clean the catfish and cut it into serving-size pieces.

Marinate the fish with a little onion, garlic powder, and sweet chili powder. Let it sit for 15 minutes to absorb the flavors.

Heat a pan and add a little canola oil. When the oil is hot, add some chopped shallots and sauté until fragrant. Add the fish pieces and sear them on all sides. Pour in enough water to cover the fish and simmer until the liquid is reduced. Add some chopped green onions and black pepper before serving.
