Ingredients

Serves 4 servings
  • 7 ozred radicchio (about 200 grams)
  • 1/2 clovegarlic
  • 1 3/4 ozwalnut halves (about 50 grams)
  • 1 1/2 ozgrated Parmesan cheese (about 40 grams)
  • 3 tablespoonsextra virgin olive oil

Steps

    To make the radicchio and walnut pesto, start by washing the radicchio under cold water, then soak it for about an hour to remove some of its bitterness.

    After soaking, drain the radicchio and pat it dry, then slice it into thin strips.

    Place the radicchio in a food processor or blender. Add the olive oil, garlic, grated Parmesan, and a pinch of salt.

    Blend until you have a smooth, creamy pesto. Adjust salt to taste and use the pesto to dress pasta or to top crostini or vol-au-vent.
