Red curry paste
1 bottle(about 2 cups/500 ml) bamboo shoots, drained

Cut the chicken into pieces. Remove the bamboo shoots from the bottle and rinse them well. (I rinsed them three times, just to be sure!)

Heat a skillet or wok over medium heat. Add the chicken directly to the pan. Since I live in a condo, I skip frying the curry paste first to avoid strong smells filling the room.

When the chicken is about 80% cooked, add the red curry paste. Stir to combine.

Once the curry paste is well mixed with the chicken, add the bamboo shoots. Stir-fry briefly, then add water (as much as you like for your preferred consistency).

Bring the curry to a boil again. Season with fish sauce to taste. I like to serve this with sun-dried catfish, but you can adjust the flavor as you like. Once done, serve hot.
