Ingredients

  • 750 gramschicken
  • 5onions roughly chopped
  • 10-12garlic colves
  • 1 inchginger
  • 2 tbspginger garlic paste for marination
  • 2 tbspshaahi jeera
  • 6cloves
  • 3small cinnamon sticks
  • 1big cardamom
  • 4small cardamoms
  • 2bay leaves
  • As required Few whole peppercorn seeds
  • 2tomatoes roughly chopped
  • 2 tbsproasted cumin powder
  • 1/2 cupfresh coriander leaves
  • 3 tbspcoriander powder
  • 1 1/2 tbspGaram masala powder
  • 2 tbspcrushed kasuri methi
  • 3 tbspturmeric powder
  • 2 tbspRed chilli powder for marination
  • 1/2 cuplime juice for marination
  • as required Mustard oil/ refined oil
  • as required Ghee
  • 2 tbspKashmiri red chilli powder

    Marinate the chicken with salt, 2 tbsp red chilli powder, 1 tbsp turmeric powder, 2 tbsp ginger garlic paste, half cup lime juice and a bit of mustard oil. Keep it for 1 hour. Shallow fry the chicken so that they r cooked from outside (not inside) for two minutes.

    Heat oil in a pan. Add 2 bay leaves, 2-3 very small cinnamon sticks, black peppercorn seeds, 2 tbsp shahi jeera, 1 big Elaichi, 4 small Elaichi, 5-6 cloves. Let it splutter for sometime. Add 5 onions, 10-12 garlic cloves,1 inch ginger roughly chopped. Fry till the onions turn translucent. Now add 2 roughly chopped tomatoes. Add salt. Also add half cup fresh coriander leaves. Cook till the tomatoes are softened and leave oil. Blend these into a fine paste.

    In a pan, add 2 tbsp ghee with the remaining oil used to fry the chicken. Add 2 tbsp Kashmiri red chili powder. Then add the paste and cook for few mnts. Now add 2 tbsp roasted cumin powder (this is imp. Use roasted cumin powder only), 3 tbsp coriander powder, 1 tbsp turmeric powder, 1 T spoon sugar. Continue cooking until the masala blend with the paste perfectly.

    Now add the fried chicken, cover the lead and cook it in low flame for 15 mnts. Once the chicken is partially cooked, add 1 cup water, 2 tbsp kasuri methi, 1 tbsp garam masala powder and cook it in low flame until the chicken softens. Adjust the salt here if required. Your Punjabi Chicken is ready!
