Mix chickpea flour, yogurt, and water to make a smooth batter.

Add turmeric powder, salt, powdered sugar, and oil to the batter and mix well.

Grease the idli stand well with oil. Add fruit salt (Eno) to the batter, mix, and pour into the stand. Pour 1 cup (about 240 ml) water into a pressure cooker and heat. Place the stand inside, cover with the lid (without the whistle), and steam for 10 minutes.

Heat oil in a pan. Add mustard seeds, cumin seeds, curry leaves, and sesame seeds, and let them splutter. Add bell pepper, then add water and bring to a boil. Add sugar and salt, then finally add lemon juice and turn off the heat.

Check the dhokla with a knife; if it comes out clean, the khaman is ready. Turn off the heat and let it cool. Remove the dhokla from the stand.

Pour the prepared tempering water over the khaman. Your khaman is ready. Decorate with emoji shapes as desired.
