Keto Sushi

I made this sushi so that my husband who is following a keto diet could enjoy it as well. Tastes great whether you are on keto or not and its really easy to make. If you would like, you could double the cream cheese to boost the fat content and make the rolls a little bigger. I recommend using a bamboo rolling mat. I didnt have one, so in this case I just hand rolled them.

Vegetarian Zucchini Sushi Vegetarian Zucchini Sushi
I just love zucchini, so I'm always thinking of various ways to eat it.You will have a lot of delicious juices left over from the zucchini after you fry it in Step 2, but don't throw it all away. Spread it on top of the sushi to finish, using a spoon. The sushi will look shiny and become even more delicious. It goes well with lemon juice and black pepper, too!
