First, boil the potatoes, let them cool, and peel them.

Add salt, red chili powder, and rice flour to the peeled potatoes. Mix everything well and mash the potatoes thoroughly so the tikkis hold together. Take small portions and shape them into tikkis. Prepare all the tikkis this way.

Heat a nonstick pan and add ghee. Fry all the potato tikkis until golden brown on both sides, flipping as needed so they become crispy.

For the green chutney, blend cilantro, mint, 3-4 green chilies, salt, and cumin in a blender to make a chutney.

Mix sugar into the yogurt to make sweetened yogurt. Extract tamarind juice and mix in sugar to make sweet tamarind chutney. Prepare all the chaat toppings.

Place the potato tikkis on a plate and top with yogurt, then green chutney, and sweet tamarind chutney.

Add boiled yellow peas, then sprinkle with red chili powder, chaat masala, black salt, pomegranate seeds, finely chopped onion, cilantro, and fine sev. Serve the aloo tikki chaat hot.
