Ingredients

Serves 6 servings
  1. As needed, peanut oil for frying
  2. 1 2/3 cupsall-purpose flour (about 200 grams)
  3. 7 ozSwiss chard (about 200 grams)
  4. 3/4 cupsparkling water (about 200 ml)
  5. 2eggs
  6. 1 tablespoongrated Parmesan cheese
  7. Salt and pepper, to taste

Steps

  1. 1

    First, wash the Swiss chard, chop it, and blanch it for a few minutes in boiling water with a pinch of salt. Drain it in a colander to remove excess water (it should be well-drained).

    Next, make the batter by placing a little sifted flour, pepper, Parmesan, eggs, a pinch of salt, and the sparkling water in a bowl. While stirring, gradually add the rest of the flour until you have a smooth, lump-free batter that is fluid but not too runny. When the batter is ready, add the Swiss chard and mix well to combine.

    Heat the oil in a deep skillet. When the oil is hot, drop spoonfuls of the mixture into the pan. Fry the fritters, turning them often, for about 2 minutes. When they are golden brown, remove them from the hot oil with a slotted spoon and place them on a plate lined with paper towels.
