Swiss Chard Fritters

Swiss chard fritters are not only a great snack and a tasty side dish, but also a quick appetizer and an original idea for a party. They’re very easy to make: just wash the Swiss chard, blanch it briefly, drain it well, and mix it into the batter. The fritters are then fried in a skillet with hot oil until golden brown, so they’re crispy on the outside and soft on the inside. Recipe from cookpad.com/it. Published by AlessandraMaisonRomantique.

Steps
- 1
First, wash the Swiss chard, chop it, and blanch it for a few minutes in boiling water with a pinch of salt. Drain it in a colander to remove excess water (it should be well-drained).
- 2
Next, make the batter by placing a little sifted flour, pepper, Parmesan, eggs, a pinch of salt, and the sparkling water in a bowl. While stirring, gradually add the rest of the flour until you have a smooth, lump-free batter that is fluid but not too runny. When the batter is ready, add the Swiss chard and mix well to combine.
- 3
Heat the oil in a deep skillet. When the oil is hot, drop spoonfuls of the mixture into the pan. Fry the fritters, turning them often, for about 2 minutes. When they are golden brown, remove them from the hot oil with a slotted spoon and place them on a plate lined with paper towels.
