Grilled Lemongrass Pork with Vermicelli (Bún thịt nướng sả)

Rinse the pork thoroughly and pat dry with a towel. Slice the pork into bite-sized pieces, making sure not to cut them too thick so the marinade can soak in. In a large bowl, combine finely chopped shallots, garlic, and lemongrass with oyster sauce, ground black pepper, fish sauce, sugar, honey, and vegetable oil. Mix well, then add the pork and toss with your hands (use gloves) to coat evenly with the marinade.

Marinate the pork for at least 2 hours. For best flavor, cover and refrigerate overnight. Preheat your oven to 350–400°F (180–200°C) about 15 minutes before grilling. Arrange the marinated pork on a rack and place it in the middle of the oven. Grill each side for 10–15 minutes. Once the first side is cooked, flip the pork to grill the other side.

When the pork turns a deep golden color, remove it from the oven. Serve the grilled pork with rice vermicelli noodles, fresh herbs, cucumber, and pickled vegetables for extra flavor.
