A classic stew I always serve with an egg on top—it's absolutely delicious!

Boil the spinach in salted water for 7 minutes, then drain.

Toast the stale bread and place it in a mortar with the paprika, cumin, minced garlic, and 4-5 chickpeas. Mash well, then sauté the mixture in a skillet over medium-low heat for 5 minutes. Add the tomatoes, remaining chickpeas, ham, and water. Stir to combine.

When it starts to boil, add the spinach and season with salt. Cook partially covered for about 5 minutes, then add the egg. Let it cook for 2 minutes and it's ready!
