Cooking Instructions
- 1
Sift the flour, cocoa powder and coffee powder into a bowl. Add the baking powder, salt, sugar and vanilla and mix well.
- 2
In a different bowl mix the water, egg and oil. gradually add the dry ingredients and mix well.
- 3
Add the chocolate chips. I used semi sweet but you may use dark chocolate for added bitterness.
- 4
Allow batter to rest for 15 minutes, then pour into oiled mold.
- 5
Preheat oven to 180°C then bake the cake for about an hour or until fully cooked. to test, try inserting a toothpick- if it comes out with no wet batter on it, the cake is ready.
- 6
Allow cake to cool outside oven for 20 minutes. enjoy.

This is a cake that a friend made for me when I lived in a dormitory. She used Bisquick, so I experimented using Japanese pancake mix to achieve a similar taste. You can make a thicker topping by increasing the amounts of butter and sugar. I only used a small amount for the cake in the photo, so the topping is quite light. Feel free to adjust the amounts to your taste. Recipe by Tsukushigumi cookpad.japan -
