Absolute baking fun and very very easy to make, no need to crave for these beauties from the bakeries or the departmental stores when you can make them in the comfort of your homes and that too with the perfect results as well. You can fill them up with any of your favourite things. I had used Boneless Chicken filling. You can use Veg filling or simple Cheese too. And baking these gives a nice crunch and texture. Aren't they just wonderfully delightful? Well! Yes ofcourse ! Serve these scrumptious Pizza Cups as an appetiser at a party or a weekend Dinner at home with family and few close knit friends. Or at Iftaar meals in this Holy Month of Ramadan. Your families and guests will definitely love them wholeheartedly.

For the dough you need to first add yeast to lukewarm milk along with sugar and let it activate. Cover and keep it aside for about 5 minutes to prove. When it's done, it is frothy and has that characteristic smell which says that it's perfect. Add this frothy yeast mix to the flour and salt mix.

Throw in some olive oil and make a smooth dough out of it. Cover and keep aside for an hour or two in a clean and a dark place undisturbed preferably in an oven to double up it's volume. If it's cold at your place, plug in your oven and preheat for almost 5 minutes and switch it off, then keep this in the oven. If not, then you can keep it in a warm place to rise.

After 2 hours, punch the dough so that all the excess air is let out. Divide it into 12 to 16 balls and roll them into small discs.

For the chicken filling, Saute all the masalas and the chicken until done for not more than 10 minutes. It is enough as we are going to bake also. So if you cook more, the chicken will not be juicy.

Arrange these discs in the greased Muffin pan. Shape them with your hands like baskets or cups. Now add the prepared chicken filling in each. Cover nicely and let it rest again for the second proofing for at least 30 to 40 minutes. This step is important. You should never skip it.

After 40 minutes of second proofing, bake them in a preheated fan assisted oven on 180° for 15 to 18 minutes. After done, top with shredded Mozzarella Cheese and Oregano. Pop it back in the oven for about 2 more minutes or just until the Cheese melts. That's it. Yummy Baked Pizza Cups are all ready to be devoured.
