Gajrela is often made with Red juicy Carrots available in Winters along with Powdered Rice but this one is a lovely twist by using Semolina or Suji. And basically it's rather semi thick and amazingly delicious. This is a very special recipe that is close to my heart as it was passed on to me by my grandmom. Carrots cooked in rich luscious Cream, Milk, Semolina and lots of dry Fruits and Nuts just right for any party or get togethers. It is a heavenly treat for all the Dessert lovers. You just have to dig into it to believe in it's magical flavour and taste. Loaded with all the goodness of so many ingredients makes it a sure shot hit. Semolina gives it an amazing flavour and tastes excellent.

Grate the Carrots first. Heat half of Ghee and roast these grated Carrots and let it cook on a low heat for about 10 minutes or until the raw smell fades away. Keep it covered. And keep stirring every now and then.

After it gets cooked and becomes tender and soft, set it aside. Bring Milk to a rolling boil on a high heat at first. Now lower the heat and add the Carrots to it. Meanwhile roast Semolina with the other half of Ghee in a pan. Semolina can be increased also but for this recipe, this measurement fits perfectly well.

After the Semolina changes colour a little bit, not too brown and gives a nice aroma, switch off the gas. It takes 6 to 7 minutes and should be done on a low heat.

By now the Carrots must be cooked thoroughly. Add Sugar and mix. To this add the Semolina and the Cardamom powder. Mix well and let it simmer on a low flame only. Next is to add the Cream. It is optional. You can skip it.

Let it simmer on a low heat for 7-8 minutes or until the Semolina gets incorporated really well. Garnish as per your liking with your favourite Dry Fruits and Nuts. I have used Almonds and Pistachios. Enjoy!
