Muffaletta Olive Salad

You can use it as a spread on sandwiches or to enhance regular lettuce and tomato salads. Serve atop pasta, mix in potato or macaroni salads. Serve with tuna and so on.

This salad originates in New Orleans by Italian immigrants. If you don't want to buy the individual ingredients or you don't want to pickle them homemade, buy the Italian Giardiniera pickled vegetable mix. You can also get the olive salad at some grocery stores. Just use most excellent olive oil. Some Muffaletta Sandwiches use this olive salad minced into a paste but I like the rustic texture.
If you make the sandwich use a good Sicilian round bread and good cuts of meat.

Ingredients

  1. 1-1/2 cuppimento stuffed green olives
  2. 1-1/2 cupblack ripened olives
  3. 4 teaspoonchopped pickled garlic
  4. 1/3 cupchopped pickled cauliflower
  5. 1/4 cupchopped pickled carrots
  6. 1/4 cupchopped pickled celery
  7. 1/4 cupchopped peperoncino
  8. 1/4 cupchopped pickled pearl onions
  9. 1 tablespoonparsley flakes
  10. 1/2 teaspoonsweet basil
  11. To tasteground black pepper
  12. To tastesalt
  13. 2 tablespoonsred wine vinegar
  14. 3 tablespoonsextra virgin olive oil

Cooking Instructions

    Slice the black olives crush the green olives.

  2. 2

    Chop the vegetables and add to the olives. Add the spices, vinegar, and oil. Refrigerate before serving.
