Dice the vegetables or chop them quickly with a food chopper.

Pour in some oil and 1/2 cup water (about 120 ml), then add the potato and cook for 5 minutes. Add the chopped eggplant, then the rest of the vegetables. Add salt, cover, and let simmer on low heat for 20 minutes.
