Ingredients

  1. For batter
  2. 4 TbsMaida
  3. 1 Tbscurd
  4. 1/2 tsprice flour
  5. 1/4 tspTurmeric powder & pinch of baking soda
  6. 1 Tbswater
  7. For syrup
  8. 1 cupsugar
  9. 1/2 Cupwater
  10. as requiredFew drops of lime juice
  11. As needed-Few strands of saffron soaked in warm water
  12. For frying
  13. 2 cupsrefined Oil

Cooking Instructions

    In a large bowl, add Maida and curd blend it well,Now mix in rice flour, turmeric powder and water till well combined. Cover and keep aside.

    While the batter is kept aside to rest.lets prepare the syrup. In a deep pan add sugar and water.Bring to a boil while stirring constantly. For at least 10 mints.now add in 3 to 4 drops of lime juice,stir and boil for another 3 minutes. Add saffron water, when the Syrup reaches string consistency.turn off the flame.

    While the syrup is still hot.we have to fry the jalebies. In a large kadai heat the oil on medium flame.

    Now,Previously prepared batter add in a pinch of baking soda and mix well.

    Fill a sauce dispenser with the batter and shape the jalebies directly in to the hot kadai.

    For shape, move round and round and back to the start point of the jalebi.move a bit fast or it will spill over

  7. 7

    Shapes wont be perfect for frist few tempts, when the jalebi starts to fry it will form it's own shape..

    Once the jalebies turn golden, drain oil and directly add in the warm sugar syrup.

    Leave the jalebies in the syrup for around 5 minutes.drainoff the excess sugar syrup and it's ready to serve.
