My first attempt to make quesadilla, but different from the original one. I have made whole wheat tortilla (which is homemade). The veg type is potato quesadilla and the non- veg is chicken quesadilla. Served with mayo green chutney and tomato sauce.

Ingredients

  1. Forthe whole wheat tortilla:
  2. 1&1/2 cup whole wheat flour
  3. 1/2 cupmadia
  4. 1 teaspoonsalt
  5. 1 tspbaking powder
  6. 2 tspmilk powder
  7. 4 tbspoil or 3 tbsp of ghee
  8. Forthe potato filling:
  9. 3large potatoes
  10. 1/4 cupsweet corn
  11. 2Green chiles (can increase as per your choice)
  12. 1onion
  13. 1 tbspfinely chopped ginger
  14. 1/4 cupfinely chopped coriander and lemon juice
  15. 1 teaspoonchaat masala, dry roasted jeera,
  16. 1/2 cupgratted of any processed cheese
  17. to tasteSalt
  18. For the chicken filling:
  19. 1/2 cupboiled chicken
  20. 1large onion
  21. 1tomato
  22. 1/4sweet corn
  23. 1/2 cupgratted cheese
  24. 1/4 teaspoonredchile flakes, oregano
  25. Forthe mayo green chutney:
  26. 1 cupcoriander leaves
  27. 2Green chiles
  28. 1/2 inchginger
  29. to tasteSalt
  30. 1 tsp Jeera powder
  31. As per taste Chaat masala
  32. 2 tbspmayo
  33. As required Oil to fry the quesadilla

    Mix the wheat flour, madia, and all the dry ingredients. Mix it well. Now use warm to make the dough. Drizzle some oil on it. And keep it aside. Then make small balls. Then roll out into thin round roti. In a tawa cook only 50 % of it on both side.

    Keep it aside.

    Now for the potato stuffing. Boil the potatoes. In a bowl add the smashed pototes, finely chopped onion, ginger, green chiles, cheese, coriander leavesand sweet corn. Mix them all. Add the dry masala and lemon juice. Mix them well.

    Now for the chicken stuffing. In a pan add oil, then add the finely chopped onion, sweet corn, tomatoes and boiled chicken. Saute it for 4-5 min. Add salt, black pepper powder, redchile flakes and oregano. Then put it in a bowl and add the gratted cheese. Mix it.

    In a tawa put oil, add the tortilla, then add the potatoes stuffing on one side. Fold it. Then fry it both side till crispy. Similarly do it with the chicken stuffing.

    For the chutney. Make a paste of coriander, green chiles, ginger. Add salt, chat masala and jerra powder. Then add mayo to it. Mix it well. Now cut the quesadilla before serving.
