Quesadilla Quesadilla
A quesadilla or sometimes specifically a cheese quesadilla, is a Mexican dish and type of taco, consisting of a tortilla that is filled primarily with cheese, and sometimes meats, beans, vegetables, and spices, and then cooked on a griddle. Traditionally, a corn tortilla is used, but it can also be made with a flour tortilla, particularly in northern Mexico and the United States.A full quesadilla is made with two tortillas that hold a layer of cheese between them. A half is a single tortilla that has been filled with cheese and folded into a half-moon shape. A quick version of the quesadilla, the cheese tortilla, is microwaved and often served to children. I found the popular copycat recipe that everyone seems to be using and/or posting and tried it, but I found the quesadilla sauce to be too sweet and heavy on the cumin so I adjusted amounts to my liking and thought it was much closer than originally written. StephieCanCook -

Stuffed Quesadilla Stuffed Quesadilla
This is a recipe inspired by needing to empty out the fridge. In hindsight, mushrooms would have probably been great in this, leftover corn, tomato, black beans, or any sort of meat you have leftover.. It's a great basic recipe. Also, I'm usually only cooking for myself, but this recipe cooks up nicely for many more people. I had tons of sauce leftover and with a little more vegetables and tortilla shells, this can easily be made for more people. Jenny -
Chicken Quesadilla Pie Chicken Quesadilla Pie
This recipe is kind of a mash up between a quesadilla and a quiche. I used leftover chicken I had on hand from making crock pot Mexican chicken earlier in the week, but rotisserie chicken would work great in this as well. It turned out so yummy! The kids actually ate this better than they do regular quesadillas 😝. Recipe adapted from : Thegirlwhoateeverything.com Christina -

The title says it all—this quesadilla is a very popular street food in Veracruz. It's traditionally made with a large, handmade tortilla, but my more practical version uses regular tortillas from the tortilleria. A mini version so you don't miss out. Bibi GarcíaTranslated from Cookpad Mexico -
Fried Quesadillas or Empanadas (Taste of Mexico) Fried Quesadillas or Empanadas (Taste of Mexico)
I first discovered fried empanadas, also known as fried quesadillas, thanks to my mother. Since I was very young, I remember her making them for breakfast, always served with fresh cheese and her homemade tomato salsa. She first taught me how to make the tortilla by hand from a ball of dough, how to add the filling, close it, and remove it without breaking it—which was the hardest part for me back then. Later, she showed me how to fry them without burning myself and how to get them golden and crispy. It’s a simple dish, but it has a great flavor and is very unique to Mexican cuisine.
