Spicy Bashed Cucumber

When I make a Japanese Cucumber Salad, I often gently bash the Cucumber before cutting it, so that the centre gets slightly squashed and softened, and the cucumber is seasoned better. I used Toban Djan (Chilli Bean Sauce) to make this salad spicy, but you can use fresh Chilli. Alter the amount of Salt accordingly.

Ingredients

4 servings
  1. 1large Continental Cucumber OR 2 Lebanese Cucumbers *about 300g
  2. 1/4-1/2 teaspoonSalt
  3. 1 teaspoongrated Ginger OR Garlic
  4. 1 teaspoonToban Djan (Chili Bean Sauce)
  5. 1 teaspoonSoy Sauce
  6. 1 teaspoonSesame Oil
  7. 2 teaspoonsToasted Sesame Seeds

Cooking Instructions

    Wash Cucumber and place it on the cutting board. Use a rolling pin to bash gently until it cracks. Break or cut it into bite-size pieces.

    Sprinkle Salt and massage, then set aside a few minutes.

  3. 3

    Add all other ingredients to the cucumber. Combine well and serve immediately.
