In my recipe of rolled Mathri Puri tastes crisp and crunchy with rolled shapes. It's the best tea time snacks which can be stored to 10 days in air tight container.

In a mixing bowl take all-purpose flour add salt, cumin seeds, chilli flakes,oil,and mix well.

Now gradually add water and Knead a medium dough. Rest it for 10-15 min then Knead well for few minutes. Now take a small portion of dough.

Rolled round it out into a medium thick chappati. Apply ghee over it. Dust a dry maida flour on it and rolled it spiral. Now divide it into small equal portions according to your choice of size of Puri. Like wise divide whole dough portion by rolled out.

On a plan surface take one portion press it from the upper portion so rolls are visible and rolled it lightly. Size of poori is thick. And put it on the paper or pp mastic or cloth. And like wise rolled all Puri.

Now heat oil on pan once oil get hot enough to fry then gradually add Puri to it according to size of pan. Fry it on low to medium flame from both side till golden colour.
