Ghevar is a special traditional Rajasthani dessert, often prepared during festivals in the monsoon season.

Add ice to the ghee and beat it until it becomes soft.

Remove the ice from the ghee.

Gradually add the flour to the ghee while continuing to beat.

After all the flour is added, mix in 3/4 cup cold ice water (about 200 milliliters) to make a thin batter. Pour the batter into a squeeze bottle.

In a pot, combine the sugar and 1 cup water to make a one-string sugar syrup.

Heat ghee well in a deep pot. Squeeze the batter into the hot ghee, drop by drop, to form the ghevar.

Pour the sugar syrup over the ghevar and serve with rabri.
