Ingredients

2 servings
  • For the ricotta cream: 1/2 cup of frozen peas(unfreeze before cooking)
  • 1/2 cupricotta cheese
  • 1/2lemon zest and juice
  • 1 tbspshallot oil(recipe will follow)
  • 1 tbspminced mint
  • Salt and pepper on taste
  • For the dressing: 3 tbsp shallot oil
  • 1 tbspfresh lemon juice
  • 1/2 tspDijon mustard or normal mustard
  • Salt and pepper on taste
  • For the chicken and toasts: 1 chicken breast without bones
  • 3 tbspshallot oil
  • Salt and pepper on taste
  • 2big slices of French bread
  • For the shallot oil and fried shallots: one cup of thinly sliced shallots
  • 1 cupcanola oil or olive oil or rice oil

Steps

  1. 1

    For the shallot oil and fried shallots sliced thinly shallots and put them in microwave-proof form and add oil. Cook on the fool power for 6-8 minutes. Start check on it after 6 minutes. Then strain oil in another cup and keep the onions for the serving.

    For the ricotta cream just mix ricotta,peas,zest and juice of lemon,shallot oil,mint,salt and pepper on taste. Mash everything with potato masher or fork.

  3. 3

    For the dressing mix shallot oil,lemon juice,mustard and salt/pepper on taste. Whisk everything.

  4. 4

    Add salt and pepper on chicken breast from both sides and brush with shallot oil. Fry on grill pan or grill or normal pan for 4-5 minutes from both sides. Then cut in pieces.

  5. 5

    Bread toast on dry pan 2-3 minutes from both sides, also brush a little bit with shallot oil.

  6. 6

    For serving put cream on bread then add a little bit of sauce, then put chicken slices ; again put the sauce and then fried onions on top. Enjoy!
