Ingredients

  • 1/3 cupfresh lime juice
  • 1/2 cupEVOO
  • 1 tspeach salt, pepper
  • 1 canlow sodium beans
  • 1 canlow sodium whole kernel corn
  • 1/2 bunchfresh cilantro
  • 1bell pepper, diced
  • 2small zucchini, diced
  • 1/2large white onion
  • 1 clovegarlic, minced
  • 1poblano pepper, minced

Steps

  1. 1

    In large bowl, mix juice, oil, S&P

  2. 2

    Rough chop cilantro and add to bowl

  3. 3

    Mix

  4. 4

    Open cans, drain and rinse

  5. 5

    Add beans and corn to bowl

  6. 6

    Chop pepper, zucchini and onion and add to bowl

  7. 7

    Add garlic and minced poblano

  8. 8

    Mix thoroughly

  9. 9

    Refrigerate over night and serve chilled

  10. 10

    Before serving, add salt, paper and lime juice to taste
