Easy Kielbasa, Apple and Brussels Sprout supper

I used an organic gala apple but a tart Granny Smith would be great to use too!

Ingredients

  1. 1/2beef kielbasa cut into small circles
  2. 1/2large white onion, diced
  3. 1medium apple
  4. 1/2 inchfresh ginger, grated
  5. 1/2 cuporganic stock— chicken or veggie
  6. 1 lbfrozen Brussels sprouts, steamed
  7. 1/2 Tbsbutter
  8. Toasted sesame seeds for garnish

Cooking Instructions

  1. 1

    Over medium heat, in large skillet brown kielbasa

  2. 2

    Once browned on both sides, remove kielbasa from pan and drain grease

  3. 3

    Set kielbasa aside

  4. 4

    Add diced onion to hot pan and carmelize

  5. 5

    Dice apple while onion cooks

  6. 6

    Add apple to pan

  7. 7

    Add S&P to taste

  8. 8

    Grate ginger into pan and stir well

  9. 9

    Once apples begin to soften, add stock and simmer 2-3 minutes until apples reach desired tenderness

  10. 10

    Add kielbasa and steamed Brussel sprouts to pan

  11. 11

    Remove from heat and add butter

  12. 12

    Stir until butter is melted

  13. 13

    Serve and add toasted sesame seeds to each serving

Yum! But looks more like pine nuts or sunflower seeds than sesame seeds. Love pine nuts!
