Ingredients

  • 1/2chopped onion
  • 4 stalkscelery chopped
  • 1/2 bagbaby carrots chopped
  • 1 tbspgarlic chopped
  • as neededOlive oil for sautéing
  • 2 lbsground turkey
  • 1/2xlarge zucchini diced
  • 1 can (32 oz)diced tomatoes (and it’s juices) or fresh
  • 1 1/2 cupsparboiled rice
  • 2-3 cupschicken stock
  • 1 bagwhite shredded cheddar cheese
  • 1 tbspbrown sugar
  • 1/2 tbspturmeric
  • to taste salt
  • to taste pepper
  • to taste adobo
  • to taste dried oregano
  • to taste thyme
  • to taste parsley

Steps

  1. 1

    In deep pot sauté the carrots, celery, onion, and garlic in olive oil. So it won’t burn add some broth to deglaze pan and keep cooking.

  2. 2

    Add ground turkey and all seasoning and cook all the way through

  3. 3

    Add can of diced tomatoes, broth, and zucchini. Simmer for 5 min until zucchini is slightly tender then add rice. Cook til rice is done and then add cheese to melt. Add salt if you want or top with Parmesan cheese
