In the bowl of a stand mixer fitted with the paddle attachment, add the peanut butter, brown sugar, baking powder, and salt. Mix well.

Add the egg and vanilla extract. Continue mixing on medium speed, then add the chocolate chips at the end.

Line a baking sheet with parchment paper. Roll the dough into balls about 3/4 inch (2 cm) in diameter and gently flatten them.

Bake at 350–375°F (180–190°C) for 8–10 minutes, depending on your oven. Let the cookies cool slightly before transferring them.

Enjoy with a glass of cold milk!

Tips: i) You can use crunchy peanut butter, but the dough may not stick together as well. Once you shape and bake the cookies, the flavor is even better because you get pieces of peanut! ii) I doubled the recipe but kept the same amount of chocolate chips. If you want more chocolate in every bite, feel free to double the chocolate chips too!
