Boiled Plantains

Plantains are an all-season staple and a simple side dish that can be served with a whole lot of meals. I personally enjoy them with roasted beef and a sour dip. That aside, this #MyCookbook recipe is to show you a stress-free way to boil plantains without letting oxidation still their shine. These plantains are boiled with the skin on so that they do not turn dark or brown, but retain their white color when cooked.

Rinse plantains under cold water and cut off each end

Score the skin of the plantain along the seam, making sure not to cut into the actual fruit
- 3
Transfer the plantains into a shallow pan followed by enough water to completely cover the top. Add salt and boil for 20minutes. A fork should piece through easily if they are fully cooked

Immediately take your plantains out of the water, carefully peel and serve warm with any meal or roasted beef (as I would have them Haha!)
