Seviya Kheer, a delicious Indian dessert made with milk and vermicelli strands is often served as a sweet accompaniment in lunch or dinner. In this recipe, vermicelli, which is also known as semiya or seviya, is roasted in ghee which gives it a nice aroma and its signature taste. This vermicelli pudding is sometimes referred as semiya kheer or seviya kheer as well.

Heat ghee in a wok. Add Sewai and roast /fry till golden brown colour. Transfer it in a plate.

Boil milk in a pan. When boiling point comes slow the flame and Add roasted sewai and let it simmer on low flame till it turn soft and mixes well in milk.

Now add sugar and cook on low flame till it turn thick or sugar dissolves completely. Keep stirring in between.

Add half of almonds, raisins, pistachio and pumpkin seeds. Keep remaining half for garnishing. Switch off the flame and let it cool for some time.

Serve it hot or chilled as per taste garnished with chopped pistachio, raisins, pumpkin seeds and almonds.
