This salad is simple and easy to make... Ingredients are easy to find at your local store and they can also be substituted for additional ingredients. So if you're a vegan or if you're on a meat-free diet or if you just love salads you definitely will love this one.

Ingredients

  1. handfulfresh spinach
  2. handfulmixed lettuce
  3. to tastetomatoes
  4. to tastecucumbers
  5. 1avocado
  6. Tinchickpeas
  7. Tinred kidney beans
  8. Tinblack beans
  9. 1 tbspgolden raisins
  10. 2 tbspshredded carrots
  11. to tastesalt
  12. to tasteblack pepper
  13. to tasteolive oil
  14. Purchase pre-washed spinach and mixed lettuce

Cooking Instructions

    In a salad bowl put a handful of mixed lettuce and then a handful of spinach lightly tossed

    Add two tablespoons of shredded carrots

  3. 3

    Peel wash and dice cucumbers... Then add to the bowl

  4. 4

    Wash and dice tomatoes then add to the bowl

  5. 5

    You're slowly building the salad layers by layers.

  6. 6

    Open the tin of chickpeas and pour the entire tin in your strainer then quickly rinse under running water add this to a separate container and put to the side.

    Repeat step six for the black beans and red kidney beans remove excess water and combine the three beans in a separate container

    Now add 4 tablespoons of the beans to your salad for another layer

  9. 9

    Add 1 tablespoon of golden raisins

  10. 10

    Peel and dice avocado an add to the top

  11. 11

    Season the salad to taste with a little salt and black pepper you can substitute regular salt for seasoning salt for added flavor.

    Then drizzle with olive oil. Bon appetit Enjoy your salad
