Ingredients

  1. 1 oz (30 grams)small hot red chili peppers
  2. 3.5 oz (100 grams)large red chili peppers
  3. 0.35 oz (10 grams)Sichuan peppercorns
  4. 2/3 cupoil (150 ml)
  5. 1.75 oz (50 grams)garlic
  6. 0.7 oz (20 grams)sliced ginger
  7. 1.75 oz (50 grams)spicy bean paste
  8. 0.7 oz (20 grams)chili powder
  9. 1/2 cupsoy sauce (100 ml)
  10. 10 1/2 cupschicken or vegetable broth (2500 ml)
  11. 2 teaspoonsstevia or 2 teaspoons sugar (10 grams)
  12. 2scallions
  13. Salt to taste

Steps

    Cut off the stems of the chili peppers and gently crush them with the flat side of a knife to release more heat. Cut the scallions into sections.

    In a pot, heat the oil and add the chili peppers, garlic, and ginger. Sauté until fragrant, then add the Sichuan peppercorns, spicy bean paste, chili powder, and soy sauce. Cook for about 2-3 minutes.

    Add the broth, stevia or sugar, scallion sections, and salt. Simmer for at least 30 minutes before serving.
