Wash and Soak rice in water for 10 minutes. Transfer it in a pressure cooker and add salt and turmeric powder and water and pressure cook till 2 whistles. Switch off the flame and let pressure releases automatically.

Heat cooking oil in a wok. Add peanuts and roast for 2 - 3 minutes and remove it in a plate.. Wash peel and chop onion

Add mustard seeds and when mustard seeds splutter add asafoetida and saute for 1 minute. Add urad dhuli dal and saute till it gets pinkish. Add onion and dry red chilli and roast till it turn golden brown.

Now add peanuts, cashew nuts, green chilli and curry leaves and chilli, salt and turmeric and mix well and saute for 1 minute.

Switch off the flame and squeeze lemon juice in it and add cooked rice and mix well. Yummy lemon rice is ready.

Serve hot with salad or pickle.
