Mathri is a favourite tea time snack from North India. Todays recipe is a slight twist to regular mathri. Usually mathris are made of maida,but to make them healthier, I have used wheat flour. They taste amazing with tea. Also they remain good for about a week.

Mathri is a favourite tea time snack from North India. Todays recipe is a slight twist to regular mathri. Usually mathris are made of maida,but to make them healthier, I have used wheat flour. They taste amazing with tea. Also they remain good for about a week.

1) In a large bowl mix together wheat flour, semolina, ajwain,jeera and salt.

2) To this add oil and mix properly.

3) Now add the grated potato gradually and start kneading the flour. You have to make a hard flour. So add only that much amount of potato which is required to make desired consistency of flour.If required you can add very little water,but as far as possible, use moisture of potatoes to make dough.

4) Let it rest for 15-20min

5) Divide the dough into 6 portions. Take one portion of the dough and roll it into thin round sheet. Using a katori cut small discs. Poke them with fork so that they dont puff.

6) Deep fry on low flame till they turn golden and crisp.

7) Cool all the mathris completely and then store them into airtight container. Enjoy as an evening snack,with a hot cup of tea!
