Badanekayi Yennegayi stuffed brinjal curry

#flavour4 Yennegayi means vegetable fried in oil. This is curry is spicy and flavourful it is a combination with jola rotti. Regular yennegayi preparation peanuts and till will be used, here I have not used, and prepared in different way.

Steps

Dry roast the onions, chillies and cumin. Add turmeric and coconut and roast for a minute.

Grind the dry roasted items with tomato, cinnamon, clove, ginger garlic paste, sambar powder, curry leaves and salt to a smooth paste

Slit the brinjal and stuff the grounded paste. Heat the oil in a wok add the stuffed brinjals and shallow fry on medium flame. Cover the lid and cook till brinjals gets 90 percent cooked.

Add the remaining masala and fry oil separates. Add water depending upon your requirement.

Can use as it is for roti. If using for rice, can add water. Mix well and cook till oil separates.

Serve with jola rotti, or any roti and rice.
