Melt the butter in a small saucepan over low heat.

Crack the eggs into a bowl and whisk them. Add the remaining ingredients, sifting in the flour last. If the batter is too thick, add an extra 1/4 to 1/2 cup milk, depending on the flour and desired consistency. Mix well.

Lightly butter a nonstick skillet and heat over medium-low. Pour a ladleful of batter into the center of the pan (amount depends on your ladle and pan size). Lift and swirl the pan to spread the batter evenly. Return to the heat and cook until bubbles form on top. Flip quickly with a spatula and cook the other side. Repeat until all the batter is used.
