(Africa we really need to change our subsistence farming LOL! Diversify). Anyway, potatoes are also said to not be very good for diabetics so I said, anything can be mashed if your heart is in it. Israeli Salad I find the star ingredients are cucumber, tomatoes, and green hoho but I said what if I cook the tomatoes? They're healthier cooked, anyway, and I've also been working on healthier salad dressings anyway.

For mokimo, suet the onions till translucent then add the maize and kunde. Cook until most of the liquid is evaporated.

Season with the salt, herbs and spices and let cook a few minutes.

Add in the mashed green mbaazi and mix in well until it is heated through.

Have some extra mashed mbaazi in case the mokimo is too liquid so you can add to solidify.

For salad, boil with little water and without oil the tomatoes, ginger, garlic, and mint until tomatoes break down. Season and let cool until it is cold.

Mix the cubed cucumber and hoho and use the cold tomato concasse to dress them. Correct seasoning.

Sprinkle the extra virgin olive oil over the salad and mix.
