Strawberries and Cream Ice Cream I

Those who know me already know that I'm a fan of ice cream🙈🍨 Strawberry is one of my favorites... I miss it so much!! This is a version I tried with a custard base and cooked strawberries... and I really liked it! But I know there are many more out there, and knowing myself, I won't stop until I try them all 😂 Recommendations are welcome!!

Cooking Instructions

Wash the strawberries. Place them in a bowl with 3/4 cup of sugar. Cook until it comes to a boil. Once boiling, cook for 5 more minutes.

Let cool slightly and blend half of the strawberries. Mix the blended strawberries with the rest and refrigerate to cool.

Whisk the egg yolks by hand with 1/2 cup of sugar. Heat the milk until small bubbles form at the edge of the pot.

Add a little milk to the yolks and whisk. Then add the yolk mixture to the pot with the milk and cook over low heat until it thickens slightly. The mixture should coat the spoon as shown in the photo.

Strain the custard and finally mix everything: the strawberries, the custard, and the heavy cream. Let it cool well, about 4 hours if using an ice cream maker.

Place in the ice cream maker for 20 minutes and then in the freezer to firm up; or in the freezer for a few hours until frozen. If not using a machine, I recommend stirring it every 3 hours to prevent ice crystals from forming.
