Ingredients

40 minutes
2 servings
  1. For boiling chole
  2. 1 bowlchole
  3. 4 bowlwater
  4. 1/4 tspsalt
  5. 1tea bag
  6. For making masala:
  7. 1onion
  8. 2tomatoes
  9. 1" piece ginger
  10. 4-6 podsgarlic
  11. To tastesalt
  12. 1/2 tspred chilli powder
  13. 1/4 tspturmeric powder
  14. Dry masala for roasting :
  15. 4-6 cloves
  16. 2 piececinnamon
  17. 1big cardamom
  18. 8-10black pepper seeds
  19. 1 tspcumin seeds
  20. 1star fruit
  21. 2red dried whole red chilli
  22. 1 tspfen kasuri methi
  23. Others
  24. Water as required
  25. 2 tbsp cooking oil

Steps

    Soak chickpea overnight and in the morning add water, salt and 1 tea bag and boil in a pressure cooker till 10 minutes after first whistle.

    Peel, Wash and chop onions, tomato, ginger and garlic. Grind all in the mixer to a fine paste. Heat oil in a wok. Add cumin seeds and when cumin seeds splutter put this paste and saute on low flame till it start leaving pan. Add salt, turmeric and chilli and saute for 1 minute. Add chickpea in this mixture and mix well and cook for 5 minutes on low flame.

    Heat a griddle. Dry roast all dry masala. Then make a coarse powder with the help of rolling pin. It takes 3-4 minutes. Just tlroll rolling pin on it. This masala is added to give it enhanced taste of Amritsari.

    Add this mixture in wok in which Chana is simmering.

    Cook it on low flame till it turn thick and masala is coated on chana.

    Serve hot with rice, puri or chapati.
