Seffa (Mesfouf) with Dried Fruits and Nuts 💜

Seffa, also known as mesfouf, is a type of couscous that can be made sweet with dried fruits and nuts, or savory with peas and fava beans (or just peas), and is served with milk. The sweet version is often prepared for celebrations and special occasions. Today, I made it to mark the new year. Wishing everyone a year filled with happiness and joy!

Seffa, also known as mesfouf, is a type of couscous that can be made sweet with dried fruits and nuts, or savory with peas and fava beans (or just peas), and is served with milk. First, rinse the couscous twice, then place it in a steamer basket and let it drain for 20 minutes.

Once drained, coat the couscous with olive oil. Place the dried fruits at the bottom of the steamer basket, then add the couscous on top. Steam for the first time.

After steaming, sprinkle with 1 cup water and let it absorb for about 10 minutes. Once absorbed, coat again with olive oil and steam for the second time.

After the second steaming, sprinkle with 1 cup milk and let it absorb, then steam for the third and final time. When done, mix in butter.

To serve, turn the couscous out onto a plate and garnish with nuts, dried fruits, and hard-boiled eggs. Drizzle with pure honey before serving.

Note: 1- When adding milk before the last steaming, add it gradually—you may not need the full amount, depending on the couscous. 2- I didn't add salt because the homemade couscous I used already contains salt.
