Ingredients

  1. 3-4chicken wings
  2. As neededfloury potatoes
  3. 1 packinstant Cream of Chicken soup (I'm using Heinz Cup Soup)
  4. 2 cups (1 pint)hot water
  5. 1/3 cupmixed peas and sweetcorn (frozen is fine)
  6. 1carrot
  7. 1chicken OXO cube
  8. 2 teaspoonsketchup
  9. 1 teaspoonvegetable bouillon powder or 1 vegetable stock cube
  10. As neededoil for deep frying

    Slice carrots into rounds

    Slice the potatoes lengthwise into thin slices. A steel-toothed Afro/Pik comb will make this much easier...

    Repeat with the slices making into thin fries

    Add the instant soup powder to the saucepan and add the hot water. Bring to the boil. Whisk thoroughly, then turn down to a medium heat and whisk in the ketchup, bouillon powder, and OXO cube

  5. 5

    When thoroughly mixed add the carrots and cook for 10-15 minutes stirring occasionally

    Preheat the oven to gas mark 6/200°C (400°F). Season the wings generously with salt, pepper, and thyme. Put in the oven for 30 minutes

  7. 7

    Cover the saucepan. Allow the sauce to cool while the chicken cooks

  8. 8

    When the chicken is cooked, reheat the sauce on a low heat, and add the chicken. Cover the saucepan and cook for 10 minutes, stirring occasionally

  9. 9

    Add the peas & sweetcorn, cover, and simmer for a further 6-8 minutes

  10. 10

    Cook the fries at 190°C or 375°F for 2-3 minutes until they float in the oil, and rattle in the basket when shaken

  11. 11

I'm a designer/artist and I learned to cook when I started making my own Chinese food over 30 years ago. I'm a lover of my native British food, but recently I've developed a taste for American comfort food, especially sandwiches and BBQ (watching too much 'Diners, Drive-Ins, and Dives' probably). 😸 Unfortunately, we don't have any independent US-style diners or drive-ins in my neck of the woods, so I had to learn from recipe books and the Food Network. I'll also be publishing some traditional UK classics in case any non-Brits want to have a crack at Brit grub.
