With oil pan fry the pounded garlic, shallot and ginger paste for 1 minutes then add in the xo sauce and stir fry till its fragrance another 1 minutes

Add in the hairy Gourd and stir fry till it's all well mix then add in water and let it simmer in Low heat for 3 minutes with lid cover

Seasons with dash of salt and let it simmer another 3 minutes

Off heat and garnish with scallion and small red Chili and serve with additional a tsp of scallop xo sauce,...best serve with steamed white rice
