Soak the wooden skewers in water for about 15 minutes (I soaked extra but used only 9).

Wash the vegetables and cut them into large pieces (I used half a bell pepper).

Prepare a baking dish that fits the skewers and line it with parchment paper.

Fill a cup with water, wet your hands, take some kofta, and shape it along the length of each skewer. Repeat until all the kofta is used (divide the kofta evenly among the skewers).

Place the skewers in the baking dish, thread the vegetables onto the skewers, and place them in the dish. Drizzle with 2 tablespoons of vegetable oil (add any remaining vegetables to the dish).

Preheat the oven to bake from the bottom and place the dish in the oven for about 20 minutes. Then switch to broil and bake until the kofta is browned.

Serve hot with salad and hummus with tahini. Enjoy!

To make kofta at home: Finely grind 1.1 lbs (500 grams) beef, finely chop 2 medium onions, sprinkle with 1/2 teaspoon salt and 1/2 teaspoon cinnamon, and let sit for 5 minutes. Squeeze out excess liquid and add to the ground beef. Finely chop 1/2 bunch parsley, wash with water and salt, squeeze well, and add to the beef and onions. Add salt and spices to taste, knead well by hand until fully combined, then refrigerate for about 30 minutes before using.

1 kilogram (2.2 lbs) of kofta serves 5 people, with or without skewers.
