Ingredients

22 minutes (chicken). Marinate 1 hour

  1. 2 teaspoonsminced garlic cloves
  2. 1 teaspoonlemon juice
  3. 1 teaspoonextra virgin olive oil
  4. 1⁄2 teaspoon dried oregano
  5. 1⁄2 teaspoon salt
  6. 1⁄4 teaspoon black pepper
  7. 1 lbchicken breast
  8. Tatziki sauce
  9. 3/4English cucumber, partially peeled (striped) and sliced
  10. 1 tspkosher salt, divided
  11. 4-5garlic cloves, peeled, finely grated or minced (you can use less if you prefer)
  12. 1 tspwhite vinegar
  13. 1 tbspExtra Virgin Olive Oil
  14. 2 cupsGreek yogurt (you can use 2% or whole milk Greek yogurt, if you like)
  15. 1/4 tspground white pepper

Cooking Instructions

22 minutes (chicken). Marinate 1 hour

    Place all ingredients together in a zip-top plastic bag or container and shake. Marinate for at least an hour.

    Grill over medium heat until chicken is no longer pink.

    HOW LONG TO COOK GRILLED CHICKEN IN AN AIR FRYER

    Spray chicken with olive oil to keep moist. Keep meat at uniform cut pieces to cook evenly. Temperature at 350 F. Cook for 18-22 minutes until the temperature reaches an internal temperature of 165 degrees.

    Tatziki sauce - Prep the cucumber. In a food processor, grate the cucumbers. Toss with 1/2 tsp kosher salt. Transfer to a fine mesh strainer over a deep bowl to drain. Spoon the grated cucumber into a cheese cloth or a double thickness napkin and squeeze dry. Set aside briefly.

    In one large mixing bowl, place the garlic with remaining 1/2 tsp salt, white vinegar, and extra virgin olive oil. Mix to combine.

    Add the grated cucumber to the large bowl with the garlic mixture. Stir in the yogurt and white pepper. Combine thoroughly. Cover tightly and refrigerate for a couple of hours.

    When ready to serve, stir the tzatziki sauce to refresh and transfer to serving bowl, drizzle with more extra virgin olive oil.
