Chicken Kolhapuri

Kolhapuri food is known for it's aromatic grounded spices. Chicken kolhapuri is a perfect blend of freshly ground spices, coconut and chicken which makes this curry look vibrant and rich. The flavours are well balanced.

Steps

Take a pan. Add oil, once hot add onions, saute it well add garlic and give it a nice mix. Transfer it in a bowl.

Add dry coconut and roast it well.Keep it in the same bowl.

Add red chillies saute it well, add all the other spices required for the kolhapuri masala and dry roast them well. Remove it in the bowl.Once cooled grind it to a fine paste along with tamarind. Your Kholapuri masala is ready

Take chicken.Marinate it with salt, turmeric and some kolhapuri masala and set it aside for around 15-20 minutes.

Take a pan.. Add oil.. Once hot.. Add onion and let it cook till golden brown.Add ginger and saute it well.

Add tomatoes and cook till they are soft and mushy. Add the Kholapuri masala and let it cook for around 5-7 minutes.

Now add the marinated chicken. give it a nice mix and let it cook for around 2-3 minutes.Add water accordingly.Cover it and cook on medium flame for 20 minutes.

Garnish it with coriander leaves.You can serve it with rice, rice rotis or bajra rotis.
