  • 2 1/4 poundscoarse semolina
  • 1.1 poundscarrots
  • 1.1 poundszucchini
  • 2.2 poundspumpkin
  • 1.1 poundssweet potatoes
  • 1 cupchickpeas, soaked overnight
  • 1.1 poundsturnips
  • Small bunch of parsley and cilantro
  • Hot pepper
  • 4grated tomatoes
  • 2onions
  • Salt
  • Turmeric
  • Black pepper
  • Ginger
  • Oil
  • Clarified butter
  • 2.2 poundslamb or beef
  • 2chopped tomatoes
  • Saffron

    Wash the meat and place it in a pressure cooker. Add the chickpeas, one sliced onion, one chopped tomato, 1 teaspoon salt, saffron, 1 teaspoon black pepper, 1 tablespoon ginger, 1 tablespoon turmeric, a little clarified butter, 1/4 cup regular oil, and a little water. Cook over heat until it simmers.

    In a pot, place one sliced onion, one chopped tomato, 1 tablespoon turmeric, saffron, a little clarified butter, 1/4 cup oil, 1 tablespoon ginger, 1 teaspoon black pepper, 1 teaspoon salt, and a little water. Cook over heat. For extra flavor, add a piece of fat.

    Boil a kettle of water during this time.

    Once everything simmers, add water to the pressure cooker, close it, and cook with the whistle on. Add the boiling water to the pot and let it boil.

    Add the peeled carrots to the pot and let them cook. Meanwhile, prepare the couscous by rubbing the semolina with water. You can find tutorials on YouTube for making couscous.

    Place the coarse semolina in a bowl, add a little salt, and rub with water.

    Once the couscous is rubbed, coat it with oil and steam it in a couscous steamer for about 20 minutes.

    Pour it into a bowl, sprinkle with regular water, and separate it with your hands until it cools, sprinkling with water. Add the turnips to the pot along with a piece of pumpkin. Return the couscous to the steamer for a second steaming, then repeat the first process, adding more water to fluff the couscous. Coat with olive oil and let it absorb.

    Meanwhile, add the peeled sweet potatoes, half of the grated tomatoes, and the bunch of cilantro and parsley to the pot. I apologize for not capturing the sweet potatoes in the picture.

    Open the pressure cooker. If the meat is almost done, add the pumpkin, zucchini, and the remaining grated tomatoes. Taste and add salt if needed. Close the pressure cooker and cook.

    Taste the broth in the pot and add salt if necessary.

    When the pumpkin is cooked in the pressure cooker, mix the broth with the other broth in the pot. Add the hot pepper and place the couscous in the steamer over the pot until it steams well. Remove it, add clarified butter, spread the couscous in a bowl, and pour the broth over it. Place the meat in the center, arrange the vegetables from the pot over the meat, and add the zucchini and pumpkin. Top with chickpeas. Enjoy your meal!
