Sweet Corn Sticky Rice (Xôi Bắp)

Today is the full moon, and also the Vu Lan festival month, so I made a vegetarian meal and sweet sticky rice. This time, since we have a lot of fresh corn at home, I decided to make sweet corn sticky rice using fresh corn. It's quick and doesn't require soaking the corn!

Rinse the glutinous rice and corn until clean. Briefly boil the corn in a rice cooker until slightly tender, then add the glutinous rice. Add 2 teaspoons salt and mix well, then pour in enough coconut milk to just cover the rice. When the rice cooker switches to 'warm,' the rice is cooked, but let it sit for another 10 minutes before fluffing the rice.

Finally, sprinkle with dried shredded coconut and serve. You can also add a little fried shallot on top for extra flavor.
