Ingredients

Serves 2 servings
  • 1 cupbasmati rice (about 200 grams)
  • 1/4 cupsugar (adjust to taste) (about 50 grams)
  • 12-13saffron strands
  • 1/4 cupcashews and raisins (about 35 grams)
  • 1/2 teaspoonfennel powder
  • 3-4green cardamom pods, crushed
  • 3 tablespoonsghee (about 45 grams)

    Soak the rice for 30 minutes.

    In a large pot, heat 3 to 3 1/2 cups water (about 700-800 ml). Add the rice and let it boil. Cook the rice until about 90% done. Then drain the rice. Pour a little cold water over the rice to stop the cooking process and keep the grains separate.

    Let the rice cool completely. Then mix in the fennel powder, saffron, cashews, raisins, crushed cardamom, and sugar.

    Heat the ghee in a large pan. Add the prepared rice mixture. Gently stir the rice on low heat so the grains don't break. The sugar will slowly melt and the saffron will release its color. After 5 to 7 minutes, turn off the heat. Your Himachali Meetha Chawal is ready to serve.
